Pumpkin Bread French Toast

What's that you say?  You have a full house for Thanksgiving, you've never made a turkey, and oh yeah...you have no idea what to make everyone for breakfast.  Ta-da, pumpkin bread french toast!  Quick, easy, cheap, and everyone will be impressed.  

I started with the Trader Joe's box pumpkin bread mix, it's so good you might as well save yourself the time of making it from scratch.  I also made the pumpkin bread the night before and let it cool while I slept, sleeping in is always a plus!  So whip up a batch for Thanksgiving morning or brunch with friends.  A full loaf of bread will serve 12 and should cost $12 or less depending on what you have in your pantry.  Recipe after the jump!


This recipe serves six and can easily be doubled.  I started with the boxed pumpkin bread mix from Trader Joe's and used half a loaf for the six servings. 

Make sure the loaf is completely cooled before cutting or the loaf will crumble when cut.  I cut half the loaf in six 1/2 inch slices aaaand might have snacked on the other half the last couple days.  Feel free to make the slices thicker depending on preference. Set aside once cut. 



Egg Batter:

  • 2 eggs
  • 1/4 cup half & half
  • 1 tablespoon dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • Butter for sauteing 
Whip eggs thoroughly then beat in half & half, sugar, cinnamon, and nutmeg. Set aside.  

Preheat medium sized skillet to medium-low heat.  

Soak bread slices one side at a time in egg batter.  I like to let mine sit for about 30 seconds to really soak it up!  



Add 1 teaspoon of butter to the pan, add moist bread, and allow each side to saute for about 1 minute with pan covered until egg batter is golden brown.  Remove from pan and repeat with additional slices.  

Cover with syrup and whipped cream and have a happy pumpkin brunch!
