Peppermint Bark Covered Grahams


Are you ready for a super easy, Christmas in your mouth, thank you lord treat?  No, then you probably shouldn't be reading this post.  If you answered yes, then I have the treat for you!



I was walking around Christmas shopping in the rain last weekend contemplating where to get my cozy warm latte...the nearby Starbucks had chocolate covered grahams but Peet's Coffee had peppermint bark.  So I said screw the treat, got a latte from Peet's, and stopped by the grocery on the way home to get supplies to put the two together.  



I already had some chocolate chips at Mac's house so the supplies were pretty cheap, but I can guarantee you the ingredients for a whole bunch of these are less than $10. 



And if you have little ones or are spending the day with a niece or nephew this is the perfect treat to make. I once put a bunch of candy canes in a Ziploc bag inside of a Ziploc bag, put it on the ground, and told my niece to stomp on them and smash them.  It's like someone told her she was going to Disneyland. Give the treats a try and let me know what you think.  Wouldn't this be a pretty hostess gift or perfect for  for a cookie party?

Ok, here we go...

Chocolate Covered Graham Squares:

  • 1 cup chocolate chips
  • 1/4 cup white chocolate chips
  • 1 packet of Graham crackers (normally three in a box)
  • 6 candy canes 


Line a baking sheet with wax paper. 



Melt white chocolate and semi sweet chocolate chips in two double boilers keeping white and semi sweet chocolates separated   I put my heat proof Pyrex bowls over sauce pans.  Bring the water to a boil and make sure the water does not touch the bottom of the bowl/double boiler, this is the perfect way to burn and ruin your chocolate. Stir chocolate occasionally until all chips are melted and turn burner to low heat.



Break candy canes into small pieces.  I put mine inside two Ziploc bags, went into the garage, and beat them with a rubber mallet.  But use a meat tenderizer or step on them, whatever you feel like.  Use this chance to get out some anger, just make sure they're tiny pieces. 
  
Break grahams into squares.  Then dip in chocolate or spread chocolate on grahams with a spatula.  

Sprinkle candy cane pieces over chocolate covered grahams and place on baking sheets to cool.  

This is simple and easy.  Have fun, make patterns with the chocolate, I used a toothpick to swirl the two chocolates.  Best of all they're great with coffee and your coworkers will love them!  Enjoy loves!
