Unlike most rum balls I use melted dark chocolate in mine and start with chocolate cookies as a base so these treats end up more like truffles than your average rum balls.
I normally only make these at Christmas and the New Year, this year we had to quadruple the recipe, but I have decided that I love them too much to limit them to once a year. So have a couple (or a handful) and enjoy! Recipe after the jump.
Here's the easy recipe, great to make with little ones since there's cookie smashing and melted chocolate involved...for that matter great for PMS too!
- 1 1/2 cups chocolate cookie crumbs
- 1/2 cup powdered sugar
- 3 tbs cocoa powder
- 1/2 chocolate chips (before melting)
- 1/2 cup - 3/4 cup rum
- 1 tbs corn syrup
I start with Newman's Chocolate Alphabet cookies but any chocolate (think Oreo) type cookie will work. You can substitute graham crackers or vanilla wafers but the flavor wont be quite the same.
Crush cookies using a food processor or place them in a plastic bag and take out all your aggression with a food mallet until you have 1 1/2 cups of cookie crumbs.
Stir together cookie crumbs, powdered sugar, and cocoa powder. Set aside.
Melt chocolate chips in double boiler or microwave safe bowl then combine with dry ingredients. Once chocolate is incorporated stir in rum and corn syrup.
Note, amount of rum can depend on wetness of dough and personal preference. Dough will be slightly sticky but should not be wet. If you get carried away with the rum don't worry, slowly adding in additional chocolate should thicken it up. That's the great thing about this recipe.
Once all the ingredients are incorporated roll the dough into balls approximately 1/2 a tbs per ball. Once the balls have been rolled toss them in granulated sugar, cocoa powder, or powdered sugar. I love the look of granulated sugar, especially in the winter.
